Ingredients:

  • 1 cup broccoli sprouts
  • 1 cup lentils, rinsed
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrot, celery, and garlic, and cook until softened.
  3. Stir in the cumin and paprika, and cook for another minute.
  4. Add the lentils, diced tomatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the lentils are tender.
  6. Stir in the broccoli sprouts and cook for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot.
