Ingredients:
- 1 cup broccoli sprouts
- 1 cup lentils, rinsed
- 1 carrot, diced
- 1 celery stalk, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrot, celery, and garlic, and cook until softened.
- Stir in the cumin and paprika, and cook for another minute.
- Add the lentils, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the lentils are tender.
- Stir in the broccoli sprouts and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
