Ingredients:

  • 1 cup cooked quinoa
  • 1 cup broccoli sprouts
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. n a large bowl, combine the cooked quinoa, broccoli sprouts, cucumber, carrots, bell pepper, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and pepper.
  3. Pour the dressing over the quinoa mixture and toss to combine.
  4. Serve immediately or chill for an hour for the flavors to meld.
